I forget how great berry shortcakes are when it’s been a while since having them.
After cleaning the berries and adding a little sugar let it sit for a while to macerated the fruit. I add a bit of lemon juice because I like the counter balance to all the sweetness.
I don’t sweeten the whipped cream but I like a bit of vanilla for the extra flavor.
My mom always made it with drop biscuits but I like to roll mine.
4 c flour
6 tps. b. powder
2 tps. salt
3/4 c cold butter, cut in pieces
1 1/3 c cold heavy cream
– Preheat oven to 450
– Mix together the dry ingredients.
– Cut in the butter.
– Stir in the cream and knead a little. ( I love the feel of it so I always have to stop before I think the dough is done, otherwise I will have berry short-bricks!)
– Roll out the dough to an oval and cut in 9 pieces.
– Place on baking sheet, brush with melted butter and sprinkle with raw sugar.
– Bake 12 min.
A little left over berries in water, very refreshing!
